I have always been a huge sweets person and no matter what I do cannot help it, hence why I have always struggles with my weight. So while doing keto I have to be super creative, especially because temptation is everywhere. These are one of my absolute favorite cookies and 1 will completely satisfy me. Through this journey I’ve learned to always be prepared and you can conquer anything. So for me that means to have plenty of snacks and some treats at hand always.
1 c coconut 3 t sweetener2 T butter
1 t vanilla3/4 C peanut butter 1 T cocoa powder
- Place butter and sweetener in microwave safe bowl. Heat until butter is melted.
- Mix in peanut butter. Pour half of mix on 1/2 C of coconut and mix till coated.
- Mix in cocoa powder to remaining peanut butter mix. Pour over remainder of coconut. Mix well till coated.
- Place drops onto a greased cookie sheet or parchment paper. Place in freezer for 5-10 minutes. Store in plastic bag in freezer.
