Mashed Cauliflower

This is by far my favorite side dish. I love cauliflower and I usually eat it 1 to 3 times a week. I could eat and entire head to myself ( even though I wont) and since I switched to mashed cauliflower I knew I would never go back to basic potatoes again. I just feel like cauliflower is so much creamier and has tons of flavor. Shockingly my family doesn’t even mind me making it instead of the normal mash potatoes. I am slowly turning them secret low carb ( hahaha).

I have a ninja professional blender that makes things so much easier and I must say I have a few more keto tools, it just makes life so much easier

**I have to say I have a few must haves for this keto diet: a blender, a mixer, a food processor, a hand blender and an oven/grill

cheesy cauliflower mash

 

Cheesy Cauliflower Mash 

Ingredients:

1 head of cauliflower

1 oz heavy whipping cream

4 oz cream cheese softened

4-6 oz shredded cheddar cheese

Pinch of salt, pepper, garlic powder, and onion powder

1 C Chicken broth

1 C water

Directions:

  1. Fill a pot with chicken broth and water and bring to a boil. Add more broth and water if needed.
  2. Break cauliflower down and try and remove most of stems. ( stems give it a strange taste) Once water is boiling add cauliflower and boil till tender.
  3. In a blender add cauliflower without water. Add cream cheese, heavy whipping cream, 2-3 oz of cheddar cheese and spices. Blend until smooth you can add a little of the broth or more heavy whipping cream to make it the consistence you like.
  4. Once blended and creamy place in a dish and mix in remaining cheese. Serve
