So Yall, Ive been a busy bee making more recipes for all you guys. And everything I have made has been amazing. And seriously made me so grateful that this diet can be altered to almost any recipe. I saw this online the other day here Original Chicken Fritter Recipe
Once I saw this I was convinced I needed this to be Keto! How perfect because my local store had 5 large chicken breast on sale and I had planned today to be chicken day. This is also my only day off for meal prep and catching up on my house. So I spent the entire day cleaning and cooking and that Keto Key Lime Pie that is leftover is going to taste so good. I’m going to stop eating tonight at 9pm since its one of my longer nights. I’m so happy this was a family hit because I’m tired and have a full day of hair to do tomorrow. I hope you guys love this recipe as much as we did and so happy to turn low carb. Sorry guys I don’t have a carb count but Id he so happy if someone wanted to make one for this recipe so we can all know.
This recipe does take a little more effort than some of my others. And it takes some planning ahead as the mix needs to be cooled for a minimum of 2 hours.
Keto Chicken Fritters
1 1/2 lbs Chicken breast diced
1/3 C mayonnaise
1/3 C Coconut flour
1/3 C almond flour
4 oz shredded mozzarella
- Mix all ingredients together in a bowl. Cover and chill for at least 2 hours.
- Once chilled heat up oil for frying and preheat oven to 350 degrees. Using an ice cream scooper take almost full scoops of mix and place in oil. Flatten out some. Fry for 2-4 minutes and flip. Once both sides are crispy and golden brown take out and place on paper towel.
- Line a cookie sheet and use a rack if you have one. Place cooked chicken on rack. Once all are on recipe makes about 16. Bake at 350 degrees for 10-17 minutes or until chicken is cooked fully.
- Let cool and enjoy!!!!
