Seriously how many of us miss chips, better yet chips and salsa!!!! OMG me!! Chips was the one thing I missed the most and it took me 2 months to find this idea. Bossman is great about helping me LC so he helps me look in the stores and turn everyday recipes into LC friendly. He’s honestly so great ( these’s his shout out haha). So it’s summer and he makes the most amazing salsa. I was so bummed because I thought Id have to go without any chips for it. Until one day I came home and my LC tortilla shells were made into perfect chips, made just for me. Yes everyone Bossman is the one to thank for this one.
Here is the LC tortillas I use but there are tons out there so you can use whichever you prefer. Cooking directions my differ
Low Carb Tortilla Chips
Low carb tortilla of choice
olive oil or spray olive oil
- Preheat oven to 400 degrees.
- Cut 2 tortillas into chip size pieces, I used a pizza cutter. Place parchment paper ( can just use pan or foil but need to watch closely) on sheet pan and grease with olive oil. Scatter tortilla chips out on sheet and brush with olive oil. Season and flip over repeat till both sides are seasoned.
- Bake for 7-10 minutes or until crisp but not to brown. Store for up to 7 days in a container.
