Cream Cheese Pancakes

I found this recipe when I was about 2 weeks into this process, and honestly it may of been my saving grace! The beginning was the worse an keto flu is no joke. It took me about 2 weeks to feel better and all I craved was sugar. I’m a huge pancake person and I use to eat 2 waffles everyday on my way to work. Now I look back and think OH GAWD did you even know what you were doing to your body! But anyway this right here was my saving grace and I make them multiple times a week I think the best part is I can make different flavors just by adding berries, unsweetened cocoa powder, vanilla, or peanut butter. And you can either make a batch ahead and freeze or leave in the fridge. And by now you guys should know I LOVE easy.

 

 

Keto Cream Cheese Pancakes

Ingredients:

2 oz cream cheese

2 eggs

1 T coconut flour or almond flour

sweetener of choice ( I use 2 equal)

Directions:

  1. Blend cream cheese till smooth. I use my food processor but you can also use a bullet or mixer.
  2. Mix in egg, flour, and sweetener. Batter is a little on the liquidy side.
  3. Heat a non stick pan and spray with butter. Pour batter in pan. Wait till edges are slightly drying and top has air bubbles. Be careful to get flipper completely under pancake to help with breakage. Cook for about 1 -2 minutes.
