Keto Jalapeno Popper Chicken

Yummmmm this one is defiantly a crowd pleaser. One of my goals in doing low carb/keto was to also get other people to atleast try the food too. Every meal I make I want it to be better than the “normal” recipe, I wanted to show people you can have a meal without missing the carbs. When I first started I was convinced I would have to make two separate meals every night, an my nights are already full. I struggled with understanding this is a Way of Life and I was going to have to make this a part of my everyday life like every other thing I did. I would need to make my meals family friendly and I needed to keep MY snacks handy (though summer has made this a bit harder). I guess what I’m saying is I needed to have a plan! So every week or so I sit down and make as many recipes as I can and try to map them out for the month. Now don’t get me wrong there are plenty of times we don’t follow it at all and I defiantly move the meals around. Ill have a post later about how I manage my monthly plan. But let me tell you this recipe is a keeper

Keto Jalapeno Popper  Chicken

Ingredients:

3 large chicken breast

5 oz cream cheese

1/2 C mayonnaise

3/4 C shredded cheddar

1/4 C parmesan cheese

1/2 can green chilies

2 medium jalapeno

salt and pepper

1 t onion powder

1 t garlic powder

5-6 slices bacon

**Optional Topping

1 oz pork rinds crushed

1/4 C parmesan cheese

2 T butter melted

Directions:

  1. Preheat oven to 400 degrees. Season chicken as desired and place chicken in a grease pan like the one above. Bake chicken for 30 minutes or until done in center.jalapeno chicken beginning
  2. While chicken is cooking fry up bacon till crisp. Mix cream cheese, parmesan cheese, mayonnaise, half of the shredded cheddar cheese, seasonings, green chilies, and 1 jalapeno diced.
  3. Once chicken is baked completely pour cheese mix over chicken. Top chicken with bacon and jalapenos, if you would like optional topping add now. Bake for about 10-15 minutes. Keep an eye on it so it does not burn. Look for sauce to be somewhat melted and slightly downing                                                                    .jalapeno-chicken.jpg
  4. Serve however desired.
